 2 tbsp very soft unsalted butter

Gather all ingredients.

Place the raw prime rib on a pan and season it with salt. .

Then, transfer the meat onto a rack or crumpled foil to allow air circulation underneath, and refrigerate for 24 to 48 hours.

Take it out of the refrigerator and allow it to sit at room temperature for a few hours

Preheat the oven to 300 degrees F (150 degrees C). Place the roast in a roasting pan, ideally on a rack.

Combine butter with coarse salt, pepper, and cayenne in a small bowl, then spread the mixture over the sides and top of the roast.

Sprinkle additional salt on top. Pour water into the bottom of the pan.

Cook in the preheated oven until the internal temperature reaches 115 to 120 degrees F (46 to 48 degrees C), which usually takes about 1 hour and 50 minutes.

Once done, take it out, cover it with foil, and let it rest for at least 20 minutes before serving.

The drippings from the pan can be mixed with broth or water and served alongside the meat.
