Yields10 Servings
 1 large egg
 5 cloves minced garlic
 1 tsp Salt
 1 tsp pepper
 1 tsp lemon zest
 ½ cup almond meal
 ⅓ cup chopped parsley
 ⅓ cup grated parmesan
 1 small onion finely diced
 1 pound ground veal
1

Adjust oven temperature to 400 degrees and place parchment paper on a baking sheet. Put the baking sheet on top of a wire cooling rack.

2

All of the meatball ingredients—ground veal, almond meal, Parmesan cheese, freshly chopped parsley, chopped onion, egg, lemon zest, garlic, salt, and pepper—should be combined in a big mixing bowl. Stir until all ingredients are mixed.

3

Utilizing a 1-½ inch cookie scoop, shape the meatballs. After that, wet your hands and roll each meatball in your palms. Evenly space them out on the wire rack placed over the baking sheet covered with parchment. Bake for 15 minutes.

4

Add the baked meatballs to the piccata sauce and cook for 5 more minutes.

5

Take the pan off of the burner and mix in the butter, parsley, and capers. After adding salt and pepper to taste, serve.
