 1 pint vanilla ice cream, softened
 1/2 cup mascarpone cheese
 1/4 cup strong espresso or coffee, cooled
  2 tbsp coffee liqueur (optional)
 1 tsp vanilla extract
 1/4 cup powdered sugar
 Cocoa powder for dusting
 1 cup grated dark chocolate or chocolate shavings

In a large bowl, mix the softened vanilla ice cream with mascarpone cheese, cooled espresso (and coffee liqueur, if using), vanilla extract, and powdered sugar until well combined and smooth.

Place the mixture in the freezer for about 30 minutes, until it starts to firm up but is still spreadable.

Cut the Tiramisu into squares or rectangles that will form the top and bottom of the ice cream sandwiches. Make sure the pieces are roughly the same size.

Take one piece of Tiramisu and spread a generous layer of the prepared ice cream mixture on top.

Place another piece of Tiramisu on top of the ice cream layer to form a sandwich.
Repeat until all the Tiramisu pieces are used.

Place the assembled sandwiches on a baking sheet lined with parchment paper.

Freeze for at least 2 hours, or until the ice cream is completely firm.

Before serving, dust the top of each sandwich with cocoa powder.

Roll the edges of the ice cream sandwiches in grated dark chocolate or chocolate shavings for an extra touch.
