Yields1 Serving
1 pound Special Meat balls (1lb makes 16 Meatballs)
 8 ounces penne pasta
 1 tbsp Olive oil
 1 onion, finely chopped
 3 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes
 1 cup marinara sauce
 1 tsp Dried oregano
 1 tsp Dried basil
 Salt and pepper to taste
 1 cup shredded mozzarella cheese
Fresh basil leaves for garnish (optional)
1

Cook the penne pasta according to the package instructions. Drain and set aside.

2

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.

3

Add the diced tomatoes (with their juices), marinara sauce, dried oregano, and dried basil to the skillet. Stir to combine and bring the mixture to a simmer.

4

Once simmering, add the Special Meat balls to the skillet, stirring gently to coat them in the sauce. Allow the meatballs to heat through for about 5 minutes.

5

Add the cooked penne pasta to the skillet, tossing gently to coat it in the sauce and distribute the meatballs evenly throughout.

6

Sprinkle the shredded mozzarella cheese over the top of the pasta mixture.

7

Cover the skillet with a lid and let it cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.

8

Remove the skillet from the heat and garnish with fresh basil leaves, if desired.

9

Serve the Special Meatball Skillet Pasta hot, with additional grated Parmesan cheese on the side if desired.
