 1 Dole pineapple
 1 package cherry tomatoes
 3 tbsp low sodium soy sauce
 2 tbsp olive oil
 2 cloves garlic, minced
 2 carrots, peeled and grated
 1 red bell pepper, diced
 2 green onions, sliced
 1 handful cilantro
 3 cups cooked brown rice

Cut the pineapple into 1-inch slices, then halve each slice to create moon shapes.

Start skewering by placing a cherry tomato first, followed by a shrimp and a piece of pineapple. They should fit together nicely, forming a pleasant pattern.

Continue this pattern until all the shrimp are skewered.
Preheat the grill to high heat.

Place the skewers on the grill and cook for 6 minutes on each side, or until the Jumbo Shrimp Skewers turn red.

Set aside 2 cups of diced Dole pineapple. In a large skillet or wok, heat olive oil over medium-high heat. Add garlic, red pepper, and carrots, cooking and stirring frequently until the vegetables are tender, about 3-4 minutes.

Add the rice, pineapple, green onions, and soy sauce. Cook, stirring constantly, for about 2 minutes until everything is heated through.
Serve immediately with the skewers.
