 1 pound precooked fantail shrimp
 1 cup cherry tomatoes, halved
 1 cucumber, diced
 1/2 red onion, thinly sliced
 1 avocado, diced
 1/4 cup fresh parsley or cilantro, chopped
 1 lemon, juiced
 Mixed greens or lettuce
 2 tbsp olive oil
 Salt and pepper to taste

If needed, remove the tails from the precooked fantail shrimp.

In a large bowl, combine the cherry tomatoes, cucumber, red onion, avocado, and chopped parsley or cilantro.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

Add the shrimp to the vegetable mixture. Pour the dressing over the top and toss gently to combine.

Serve the fantail shrimp salad on its own or over a bed of mixed greens or lettuce
