 2 cups Flour
 2 tsp Fish Seasoning like Old Bay or Tackle Box
 3 cups Parmesan Cheese, grated
 3 Eggs
 ¼ cup Olive Oil
 ยฝ cup Lemon Juice
 2 Stick Butter
 1 cup Heavy Cream
 ½ cup White Wine (dry)

Pound the Calamari Steaks to a ยผ inch thickness.

Mix the Tackle Box seasoning with flour for the first step of the breading process. Beat the eggs in a separate bowl, and place the parmesan cheese in another bowl.

Bread the steaks by first coating them in the seasoned flour, then dipping them in the beaten eggs, and finally covering them with parmesan cheese.

In a small saucepan, combine lemon juice and wine, and simmer over low heat until reduced to ยผ cup.

Gradually stir in the cream, bring to a simmer, and reduce until the mixture reaches ยฝ cup.

Dice the butter. Remove the pan from heat and add the butter gradually, stirring constantly. Incorporate each portion of butter completely before adding the next. Keep the sauce warm while cooking the steaks.

Heat a skillet over medium heat.

Add olive oil to the pan and sear the breaded calamari for 2-3 minutes on each side, until golden brown. Remove from the pan.

Cut the steaks into 1-inch cubes and plate them. Drizzle with the lemon butter sauce and garnish with parsley. Enjoy!
