Add the wine and butter to a small saucepan over low heat.

Once the butter is melted, add the rock lobster meat to the saucepan.

Cook the lobster meat over low heat for 4 to 5 minutes. Avoid cooking too fast to prevent the release of the white protein substance called pellicle.

Flip the lobster meat and continue cooking for another 4 to 5 minutes, or until the lobster is bright white and firm, but not overcooked.

Taste the lobster first, then season with sea salt and freshly cracked pepper if desired.
