Salt and freshly ground pepper to taste
3 tbsp olive oil
2 tsp soy sauce
1 tbsp red-wine vinegar
4 sprigs rosemary and 1 tsp dried
1 tbsp finely chopped garlic
2 tsp ground coriander
1 tsp ground cumin
2 tsp grated lemon rind
¼ tsp red pepper flakes
1
Preheat a charcoal grill, broiler, or grill pan.
2
Season the swordfish steaks with salt and pepper on both sides. In a shallow dish, mix the oil with soy sauce, vinegar, rosemary, garlic, coriander, cumin, lemon rind, and pepper flakes. Blend thoroughly.
3
Place the fish steaks in the marinade, ensuring they are well-coated on both sides. Cover with plastic wrap and let marinate for 10 to 15 minutes.
4
For grilling (or using a grill pan), place the fish on the grill and cook for 3 to 4 minutes per side, or longer if desired.
5
For broiling, place the fish on a rack and broil for 3 to 4 minutes on each side. Serve with a string bean salad.
