
Pat the drumsticks completely dry with paper towels. Mix smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper together. Rub all over the drumsticks and let sit at room temperature for 30 minutes.
In a small saucepan over medium heat, combine honey, soy sauce, minced garlic, ginger, ketchup, apple cider vinegar, and brown sugar. Stir and simmer for 5 minutes until slightly thickened. Remove from heat and stir in butter for a glossy finish. Set aside half the glaze for serving.
Preheat oven to 220°C (425°F). Line a baking sheet with foil, place a wire rack on top, and brush with olive oil. Arrange drumsticks upright on the rack.
Roast for 25 minutes until golden and starting to crisp. No glaze yet.
Brush generously with glaze. Roast 10 more minutes, brush again, then roast a final 5 minutes until deeply caramelized.
Switch to broil on high for 2–3 minutes until the glaze is bubbly and slightly charred at the edges. Watch carefully!
Rest for 5 minutes. Drizzle with reserved glaze and top with sesame seeds and green onions. Serve and
